Raspberry Jam Streusel Bars
Equipment
- 1 8-inch square pan
- Electric mixer fitted with a paddle attachment
Ingredients
- 1/4 cup plus 2 tablespoons (85 g) unsalted butter, room temp and cut into 1/2 inch chunks
- 1/2 cup (106 g) brown sugar
- 1/4 teaspoon baking soda
- 1 teaspoon Diamond Crystal Kosher salt
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 3/4 cup (90 g) all-purpose flour
- 3/4 cup (75 g) old fashioned rolled oats
- 1/4 cup (29 g) walnuts or pecans, chopped and lightly toasted
Filling
- 1/2 cup (170 g) raspberry jam, substitute your favorite jam flavor
Instructions
- Preheat the oven: Heat your oven to 350°F (175°C) and arrange a rack in the middle. Spray an 8-inch square pan with non-stick spray and set aside.
- Prepare the dough: In a bowl of an electric mixer fitted with a paddle attachment, cream the butter, brown sugar, baking soda, salt, vanilla, and cinnamon on medium speed until smooth.
- Add dry ingredients: Add the flour and oats, mixing on low speed until just combined. The dough will be crumbly.
- Layer the crust: Divide the dough in half. Press half of the dough into the bottom of the prepared pan, smoothing it evenly with your fingers or the bottom of a measuring cup.
- Prepare the topping: Mix the remaining half of the dough with the toasted nuts.
- Add the jam and top with dough: Spread the raspberry jam evenly over the dough. Sprinkle the remaining dough and nuts over the jam. It’s okay if the jam shows through.
- Bake the bars: Bake for 25-35 minutes, or until the jam is bubbling and the streusel topping is golden brown. Let the bars cool before cutting into squares.
