Ingredients

  • 1/2 cup (120 g) whole milk plain Greek yogurt
  • 1/2 cup (120 mL) lemon juice
  • 1/4 cup (60 g) tahini
  • 1/4 cup (15 g) nutritional yeast, sub 2 to 3 briny olives or anchovy filets
  • 1/2 cup (30 g) parsley, roughly chopped
  • 1/2 cup (30 g) basil or mixed herbs like dill and cilantro, roughly chopped
  • 1 garlic clove finely minced
  • 1/4 teaspoon Diamond Crystal Kosher Salt, adjust to taste (see notes)
  • pinch black ground pepper
  • 3 tablespoon (45 g) olive oil
  • water as needed, adjust to preferred consistency

Instructions

  • Add all ingredients to a food processor or blender. Blend until smooth and creamy.
  • Adjust the consistency by adding water, 1 tablespoon at a time, to reach your desired thickness.
  • Store the dressing in an airtight glass container in the refrigerator for up to 1 week.

Notes

  • Salt: Use Diamond Crystal Kosher salt for accuracy. If substituting with fine sea salt, start with less and adjust.
  • Vegan Option: Substitute Greek yogurt with non-dairy plain yogurt.
  • Substitutions: Replace nutritional yeast with 2-3 briny olives or anchovy filets for a different flavor twist.
